5 ways by which fruits and vegetables can improve nutrition and dietary diversity of Ghanaian.

Do you know that the Food and Agricultural organization of the UN marked the year 2021 as the international year of Fruits and Vegetables?

Fruits and vegetables has played a significant part of the Ghanaian diet. It is consumed in various forms as either the main dish or part of it. Our soups and stews cannot be prepared without these vegetables such as pepper, tomato, garden egg and okra.

Due to the enormous health benefits of fruits and vegetables in the diet of man, the FAO through their celebrations sought to raise awareness on how fruits and vegetables contributes to improved nutrition dietary diversity, and health, impact society, economy, and the environment; and contribute to sustainable development.

This paper will look at five ways by which fruits and vegetables contributes to improved nutrition and dietary diversity of Ghanaian.

#1. Vegetables are rich in vitamins and minerals such as the vitamins A,B,C,D,E and K. These vitamins play a significant role in the human body,however most of them cannot be produced in the body and thus are derived from the food we eat. Vegetables which form part the diet are rich in such vitamins and thus provides a rich source.

# 2 Vegetables can promote weight loss.A healthy weight is an indication of good health. Scientist have linked obesity to serious health implications such as heart disease, stroke, diabetes, and high blood pressure. The number one cause of obesity is diet.Vegetables can help one slash calories. Adding more vegetables to our diet reduces the quantity of food one eats and offer more roughage which improves digestion as well.

Vegetables are also known to add additional potassium when consumed and thus help reduce non-communicable diseases in the body.

#3 Vegetables contain antioxidants such as vitamin C, E and K. Green leafy vegetables such as cabbage, kontomire,etc are due to their high K content are known to prevent inflammatory diseases.

#4. Vegetables add bulk to our diets and makes one feel full preventing excessive intake of carbohydrates which can lead to wait gain. The rich fiber content of vegetables helps lower the risk of heat diseases as well as type two diabetes and bowel cancer.

#5.Vegetables offer diet diversity to people. A wide variety of foods to be eaten at a particular time is made available to people. One can thus vary his food and prevent deficiency diseases associated with eaten one-way food.

Per the role of vegetables in our diets as highlighted let eat a lot of vegetables and fruits. Some of these vegetables such as Solanum torvum , contomire, ayoyo etc. can be obtained freely in our environments.
