How to make the perfect Ghanaian vegetable gravy

This is a Ghanaian style delightful vegetable sauce formula. 

It is eaten in pretty much all aspects of the country. 

Ingredients


3 Large Onions 


2 Large Tomatoes 


1/4 cup Fresh Coriander 


2 tsp Oil 


2 Cloves 


2 Cinnamon Sticks 


2 Cardamoms 


10 Garlic Pods 


4 inch Ginger Piece Chopped 


2 Green Chillies 


2 tsp Oil 


Fixings 


Sauce Paste – 


3 Large Onions 


2 Large Tomatoes 


1/4 cup Fresh Coriander 


2 tsp Oil 


2 Cloves 


10 Garlic Pods 


4 inch Ginger Piece Chopped 


2 tsp Oil 


Strategy 


In a thick lined skillet, heat 2 tsp oil. Add garlic units, cleaved ginger, cinnamon, cloves and green chillies. Fry several minutes. 


Add cleaved onions and tomatoes. Keep it covered and cook for 5-6 mins on medium fire. 


Whenever they are caramelized, switch off the warmth and let it cool down totally. 


Add this to a blender container alongside coriander leaves. Make a smooth glue out of it and keep it to the side. 


In a similar dish, heat 1 tablespoon of oil and add slashed blended vegetables. Fry on medium warmth for 2-3 mins first. 


Presently add green peas and keep cooking for another 4-5 mins. When the vegetables are the greater part cooked, eliminate them from warmth and put them away. 


In a similar skillet, heat 2 tablespoons of oil. Add the pre-arranged sauce glue and cook for 5-6 mins. 


As the oil overflows out of the sides, add red stew powder, bean stew powder, coriander powder and salt. 


Cook for a couple of more minutes and add the broiled veggies and paneer. 


Blend well, add a couple of tablespoons of water if the sauce is dry. Permit it to stew. 


Serve hot with some hot rice.
