5 Ingredient For Jollofrice

Jollof rice, or jollof (/dʒəˈlɒf/), also known as benachin in Wolof ('one pot'), is a one-pot rice dish popular in many West African countries such as The Gambia, Senegal, Ghana, Nigeria, Benin, Cameroon, Sierra Leone, Côte d'Ivoire, Liberia, Togo and Mali.

With just 5 simple ingredients , simple preparation you can have a decent meal with the benefit of carbohydrate and omega 3 oil from the mackerel fish.Your may wish to buy Suya and serve as extra protein on the rice.Enjoy

1. 2 cups rice,washed

2.400g canned mackerel

3. 2 cupsChicken stock

4. 2tbsp cayenne pepper

5. 2tsp curry powder


• Seperate the tomanto sauce from the mackerel and pour the sauce into a saucepan and simmer over medium heat.

• Add curry powder, cayenne pepper and simmer for 2minutes.

• Add rise and braise for 5minutes.

• Add chicken stock, stir and simmer for 25minutes stirring occasionally.

• Add mackerel stir in lower tge heat and let cool for 15minutes.

• Mackerel jollofrice is ready.
