This oven-roasted garden egg cooked in a spicy tomato sauce is bursting with flavours and very easy to make


10-15 Garden eggs small

3 tablespoons Oil

1 cup Chopped onions

2 cloves Garlic

1 teaspoon Curry powder

1 teaspoon smoked paprika

1 teaspoon pepper flakes

400 g Chopped tomatoes (1 can)

1 tablespoon Chopped fresh thyme or half teaspoon dried thyme

200 g King prawns (1 cup)

Salt to taste


Preheat the stove to 220 °C. 

Line a preparing dish with foil to prevent the nursery egg from staying. Cut the stalks off the nursery eggs, cut them into half and spot them on the preparing container. Sprinkle some salt and cover with foil. 

Spot into the stove. 

Permit to cook for around 15 mins. 

Free once again from the stove and pour in a bowl. Utilize a potato masher or fork to squash the nursery eggs appropriately. 

While the nursery eggs are in the stove, heat up the oil in a dish under medium warmth. 

Add the onions and cook until clear. 

Pour in the garlic, curry powder, smoked paprika and pepper pieces. Mix constantly for 30 secs. 

Add cleaved tomatoes and thyme. Cover the container and permit to stew for 10 mins. Mix a couple of times to forestall staying. 

Add the prawns and the squashed nursery eggs with some salt. Blend well and cover the prospect 5 mins under low warmth 

Eliminate from heat.
