These Ghanaian foods have low to moderate Glycemic Index and are therefore good for diabetic patients but these foods should be eaten with moderation and in small quantities. Banku consumption by diabetic persons should be closely monitored because it has high Glycemic Index. The reason given for the Banku high GI is the combination of the cassava dough and maize.
